Following the store in Ebisu, Tokyo, the second [Salt Water] restaurant opened in Dai nagoya Building. The name of the restaurant has a profound meaning. It comes from the [salt water] used to boil pasta, and David Meyers', an American Michelin chef/producer, love for the [ocean]. The signature dish at the Nagoya restaurant carries its name in the title, [Salt Water Burger]. It is created to present the inherent flavor, fragrance, texture, and color of the ingredients as much as possible. The dish combines the complexities of a washed rind cheese, sweetness of caramelized onions, and slight bitterness of arugula. 100% lean meat, extra thick patty is very satisfying. My Kuri steak is a finely-marbled, rare cut of beef known for its perfect sweetness and tenderness. It's seasoned with rock salt, and you can try it with garlic flakes and soy sauce with Japanese mustard. My Tajima beef is from a pure breed of cattle that is mixed with any other cattle raised in the prefecture. It features perfect marbling, and you will truly experience the flavour of this red meat. The homemade chonmaru chilled noodles are made fresh to order. I pay particular attention to the atmosphere of a restaurant one can relax in, the rare choice cuts of excellent Tajima beef and the a la carte dishes. Put Wagyu (Japanese beef) broth gelee at the bottom of the glass first, then layer onion mousse and wagyu rillettes. Beets in espuma form are placed on top. Each of the elements are from borscht. We reconstruct borscht with each element in a unique dish. Goat meat carpaccio. I'm familiar with goat meat because it is very famous in my home town of Kikaijima. The smell of the meat can be eased with rocket leaf and deep-fried artichoke, which are known for having a slightly bitter taste. Enjoy this dish with mugwort sauce. Chef Yoshino says: "We think about the customer first while we are cooking, so every step of our cooking style is logical and very simple." The customer can feel terroir from all the dishes that intuitively impress them. Although we want to make this restaurant casual because we provide sophisticated dishes and service all of the time, you can also use our restaurant for special occasions or business meetings.
