Since I have been constantly cooking since deciding to become a chef at age 18, I'm confident in my pasta. Among the items currently on the menu, I recommend the Organic Veggie Peperoncino, which brings to life the maximum flavor of the vegetables it contains. We use produce from the Aoki Plantation in Miura, Kanagawa Prefecture, which is grown in specially-selected soil and reliably delicious. The daikon (white radish) and turnips are always fresh and delicious whether raw or cooked, and we also stock high-quality Brussels sprouts, cauliflower, and more from the same plantation. Our hideaway-like Japanese space is located in Jingumae, Shibuya which is the area transmitting the latest trends. This space opens as the bar [Michi wo shiru] from Sunday to Wednesday, and as [MYSH Sake Bar] from Thursday to Saturday. When you open the sliding door made of old wood with the sense of [wabi], an aesthetic sense of Japanese art emphasizing quiet simplicity, you will see the counter with tatami mats, illuminated with indirect lighting. Though we have a hideaway-like atmosphere in Shibuya, many young guests casually visit this cozy space to enjoy sake (Japanese alcohol). From Thursday to Saturday, the female managers serve the sake of the day selected by their own and local dishes from all over Japan. We search for and serve especially sweet sea urchin, and we do not use alum to preserve the shape, so you can taste the raw, natural flavor. Our shrimp dishes use fresh-caught deep-sea shrimp and button shrimp unless it is seasonally unavailable. When we first opened our Ebisu location we wanted a refreshing summer treat, and this has been our specialty ever since. A culinary harmony of tart tomatoes, crab, and avocado salad, accented with the perfume of saffron.
