With meticulous care, we make our "Matsutake Mushrooms with Kombu Kelp Strips" and other favorites such as Salted Dried Squid, Savory Stewed Shellfish, and Boiled Manila Clams by hand. Every one of these lavish dishes allows you to experience the full range of all the vivid seasonal flavors. We get our shishamo smelt fresh in October and then dry it by hand. We make our dried mullet roe from striped mullet ovaries and even our plum wine is homemade. The fresh, seasonal ingredients we obtain at Tsukiji Fish Market every morning vary slightly and this is reflected in our dish availability. Here at Chisen, our chef grills the skewers right in front of our guests. He enjoys providing a description of the ingredients and their flavors for each skewer or small bowl of food he serves. We serve especially tender and well-marbled top sirloin. The meat is cooked in the restaurant's specialty grill at 980 degrees celsius for a short time. As a result, the meat is extremely juicy and tender. The restaurant's beef fillet, New York strip, and rib eye are all USDA certified. Such high-quality meat is not easy to come by, composing only 2 to 3 percent of the beef production in the United States. The restaurant prioritizes the quality of ingredients used. As much as the attention to freshness has to do with the flavor of dishes, it also has to do with providing food safe for consumption. A rice cracker factory with a 40 year history was renovated for this dining bar. That is why we have a unique, vintage interior with an atmosphere of the old days. Our many walls to separate the rooms enable each room to be a private party space where you do not have to worry about other people. Serving a wide selection of dishes including pizza, pasta, main meat dishes and ramen noodles, we are suited for various occasions from having a meal to enjoying drinks. Office workers and those who want to drink after dinner often visit us in early hours, and regular guests or restaurant workers in neighborhood gather together in late hours.
