Fresh bread and organic vegetables together with a versatile wine selection

Since our alcohol selection is mostly wine, we use our own original recipes to make a large selection of homemade bread to pair with wine or serve as a palate cleanser. Furthermore, we don’t have a wine list here, nor do we offer descriptions. This is because we take a lot of care in finding the best wine for each customer’s taste. We take the time to listen carefully to what kind of flavor each customer prefers and then use that to match them with a delicious wine to enjoy. We also use seasonal organic vegetables as much as possible with our food, as well as offer a selection of hard to find vegetables like shio (salt) tomatoes, all of which can be ordered in whatever amount you prefer. The dining atmosphere we provide here is perfect for enjoying our wine and kushiage (fried meat/veggie skewers) in comfort. The calm and relaxing atmosphere inside is well-suited for a date, too. We serve seasonal ingredients simmered in soy sauce. To support the flavors of the raw ingredients, we use high heat to produce a light, fluffy body. Whether it's vegetables, seafood, or meat, our chef is particular about fresh, high quality ingredients. The platter of hors d'oeuvres for the prix fixe banquet uses seasonal ingredients with vibrantly colorful presentation, which lets the chef's eye for fine details shine through. As the owner of a store positioned within Adachi Market, the chef always says, "I'd like to my customers to enjoy a fresh stock of seafood at reasonable prices." The chef plans about one or two events a month where you can enjoy even more of a bargain than usual. Next to a winery, our restaurant is in a house on a small hill in Himi.

[SAYS FARM] is a winery in Toyama. Though our dishes are Italian-based, they are created freely regardless the genre and ingredient. We use wild herbs and vegetables grown at our site, seafood from the fish port in Himi that is in front of us, and eggs our hens have just laid. Our menu is not fixed but it is decided by the chef depending on the ingredients of the day. Enjoy our dishes using local ingredients. Enjoy delicious udon in our self-serve udon restaurant at attractive prices!

Our most precious dashi soup stock here at Tanukiya. You can savor it most simply and directly in our kake udon (thick wheat noodles). We have customers who only ever order this, so it must be delicious - why not try some yourself? We make our dashi stock from kombu kelp harvested near Hokkaido's Rebun Island, and when our guests hear that, some are shocked that we would use such high quality kombu as soup stock. But while we offer reasonable prices, we're dedicated to not making compromises where we shouldn't. Just because we call ourselves a "self" udon (thick wheat noodle) restaurant, it doesn't mean that we don't pay attention to our guests, and we endeavor to get our freshly made food out on time. We also remember the faces and preferences of our regulars and work hard to ensure that you enjoy yourself.
