A renowned restaurant in downtown seeking for the best pork cutlet as a casual food. 

We are aiming for offering a traditional delicacy that is non-eccentric yet authentic. The point is how to bring out its original taste to the maximum. Fresh domestic pork will be carefully prepared by taking off the extra fat, coating thin and fine batter without any gap between the meat, and using the lard from Holland to reveal a better aroma and richer taste. Adjusting low and high temperature oils in a pot is the key to make a perfect deep fry. Our pork cutlet is thinly-cut, however has a sophisticated savory taste. We are equipped with a plain-wooden counter that seems like reflecting the wholehearted attitude of the owner, and have a perfect atmosphere to enjoy the downtown taste.

Most of the things served by the restaurant have gone through the che's iterative process. With special attention to providing handmade dishes, the chef uses her self-taught knowledge to the fullest extent. Among those things, the special sauce, which comes in three varieties, is her greatest pride. She picks wagyu (Japanese beef), especially Kobe black-haired beef. In order to have her customers taste the best flavor from each part of the meat, she brings the meat in blocks, and cuts them herself. She feels rewarded when her customers compliment the food while leaving the restaurant, and her passion for making the ingredients herself and putting extra effort into the meat has not changed ever since the opening of the restaurant. In the heart of Yunokawa hot spring, [Sushi Restaurant Kihara] situated at the best location overlooking the Tsugaru Strait right in front of your eyes. In the restaurant, Aomori hiba solid plate counter creates a dignified atmosphere. On a clear day, the view of the Shimokita Peninsula creates a refreshing atmosphere. In this atmosphere, sushi is served with selected local ingredients including seafood supplied from the chef's hometown former Minami Kayabe-cho. 80% of the sushi at the restaurant is in the authentic style, but chef's creed of [local specialty sushi] creates original dishes such as gizzard shad lightly washed with vinegar and rolled with local specialty kelp. After 20 years in Hakodate, the restaurant serves Hakodate style sushi based on Edo mae style.
