Fried half-chicken has long been enjoyed locally in Kushiro and Otaru regions of Hokkaido. With "Kaburitsuki Spring Chicken," the chef recreates the dish with his original techniques. He prides himself on the chicken which is so tender that even small bones can be eaten. It also goes well with beer. Another hit on our menu is our extra-large "hokke" (a type of mackerel), shipped from Rausu, a region famous for producing hokke, which is presented stunningly in "hiraki" style where the fish is opened up whole. The deep flavor of thick, fatty meat and the hearty portion of the fish hanging off the plate is enticing. At Kushirokuya, we strive to recreate the comforts of home. Our head chef's specialty is a grilled fish carpaccio that combines Western flavors with Japanese ingredients. Particularly noteworthy are the freshness of our ingredients and the original balsamic sauce that accompanies them. Fresh dashi (Japanese soup stock) is made in-house daily from Rishiri kelp, and is the secret to bringing out the best in the dish. All effort is made to procure ingredients from Hokkaido only when they are in season. What's more, every angle of the dish is designed to surprise the diner: its texture, portion, and display is delicately planned and balanced. Our popular Deluxe Caesar Salad dish also has a unique crumbled cheese quattro to add a surprisingly crispy texture. We offer A5 grade Saga beef in a variety of our dishes. Our Seared Saga Beef Sushi is one of them. The savory taste of high-quality meat is a delicious match for the tart, vinegared sushi rice. All of the ingredients we use at our restaurant are carefully selected. In addition to the brand-name Saga beef, we also use fresh fish like our torafuku (tiger puffer) from Yamaguchi and Kyushu. Our carefully crafted dashi (Japanese broth) is mixed with seasonal ingredients and offers an exquisite taste. It is a blend of kombu (kelp) and two types of dried fish flakes, katsuo (skipjack tuna) and maguro (bluefin tuna). We then heat it all up with water and let it stew for eight hours in summer, or twelve hours in winter. As a finishing touch, we lovefully garnish it with yuzu (a citrus fruit) to evoke a delightful fragrance. Not only do we adjust the stewing times based on climate and temperature, but, in December, we also add the delicate taste of Shogoin daikon radish and charcoal grilled amadai (tilefish) to our soup. The chirandori is imported directly from Kagoshima Prefecture every single day to be roasted over a charcoal flame. The chewiness of the meat combined with the umami of free-range chicken is quite satisfying. Definitely try this item. The vegetables are from Kumamoto, and were grown without pesticides. Everything we buy is reliably high-quality, from trusted vendors only. We are also quite particular about our domestic beef, Kagoshima kurobuta, and Satsuma "chirandori" chicken. The vegetables, easy to digest, as well as the high-quality, directly-sourced free-range meat, increases umami and makes the entire dish more delicious. Pay special attention to the volume of the food. There are seats that allow you to get a great view as you eat. Seasonal ingredients and delicious crabs at this cozy, intimate restaurant

In traditional kaiseki (course meal) dining, "Owan" bowl dishes are particularly important. Our bowl dishes include snow crab fritters, "Shogoin" daikon radish, mushrooms, red kidney bean greens and thick wakame (seaweed) topped with grated turnip. It is an elegant soup, with exquisite, vivid flavors. We only select crabs with the finest texture. A firm texture blends perfectly with the miso (fermented soybean paste) and the sweetness of the flesh. Recently we have used crabs from Kami, in Hyogo Prefecture, but we're actually more interested in sourcing the finest products available in season than in simply focusing on famous production areas. Proximity with out customers is also a distinctive trait of Kansai cuisine. Without being invasive, we like to hold moderate conversations with our customers, adapting to their desires and personal preferences, and striking a delicate balance that really takes years of experience to master. The yuba (tofu skin) and wheat gluten, which many people come to enjoy, are from a long-standing store in Kyoto called Hanbey-Fu.
