This is the local cuisine from the chef's hometown in Akita. The Kirintanpo are each carefully made by covering skewers in pounded rice and grilled separately. Koshu red chicken thighs and a variety of mushrooms, onions and burdock, are each articles of uniquely brilliant flavor. As in the "Kiritanpo Stew" and more, the soup we use is also handmade, made by thoroughly boiling the chicken bones for 8 hours. The flavor that draws out of the bones has a distinct body, rich umami flavor, and a refreshing taste-cooking's secret key. We keep careful watch over our guests as well: "It looks like their glass is empty." "Maybe they are still eating." We aim to give our customers a smooth reception and visit the table before they make an order. It is only 5 minutes walk from any train line that serves Fujisawa station. "Shunsai Kushiyaki Dokoro Shoku" is a great izakaya that never uses any chemical seasoning and makes slow-cooked and labor-intensive food. Starting with the "abushin," the meat served at this restaurant, including organ meat, is very carefully chosen from domestic producers in Japan. We take great care not to let the meat be frozen so that its pure flavors will not be lost. Not only is the meat domestically produced, but even the karubi (ribs) and rumen are also locally produced. The cuts of meat that are supplied change every day so when guests order, we will introduce the chef's recommendations for the day. We use the best heifer of the day from the established butcher "Yoshizawa Shoten" in Ginza. The chef brings out the best taste while entertaining the customer with cooking techniques and tricks like flambe over the counter. In teppanyaki (iron griddle) cuisine, the tastes of ingredients are condensed to be served in the best condition to the customer. In this cuisine, the deliciousness of the ingredients themselves is most important. We use only seasonal and fresh materials and the best beef with moderate fat. We cook in an open kitchen and customers are at the counter table in front of us. Because we are physically close to the customers, we try to talk to them to discover their preference so that they can request their favorite seasoning. We have five different spaces with different characteristics to suit all generations, families, or couples. We have a good reputation from female customers about the shop atmosphere.

Our carefully-prepared beef tripe is stewed together with cabbage and other vegetables in chicken stock. The flavor of each ingredient stands out, without extraneous seasoning, so it's light enough to eat to your heart's content. Enjoy with ponzu-style (soy citrus juice) house dressing and yuzu-kosho paste (yuzu zest with chili peppers). The meat is processed by hand slowly and carefully, so it is odorless and has a lightly chewy texture. At our restaurant, we ask you to take off your shoes at the door. We have sunken tables so you can stretch out your legs and relax both your body and spirit while enjoying our food and filling up on our made-to-order piping hot Motsunabe. The two tables in the back can be closed off with fusuma screens for a more private atmosphere. Although we can't close the fusuma completely for ventilation purposes due to the steam from the Motsunabe, the room certainly feels private enough for small banquet-style gatherings.
