Starting with the "abushin," the meat served at this restaurant, including organ meat, is very carefully chosen from domestic producers in Japan. We take great care not to let the meat be frozen so that its pure flavors will not be lost. Not only is the meat domestically produced, but even the karubi (ribs) and rumen are also locally produced. The cuts of meat that are supplied change every day so when guests order, we will introduce the chef's recommendations for the day. Thinking very carefully about how to respond to the guests' desires, we do everything we can to accommodate guests who say "I want to eat so much more!" or express their desire to have an afternoon gathering. We use the best heifer of the day from the established butcher "Yoshizawa Shoten" in Ginza. The chef brings out the best taste while entertaining the customer with cooking techniques and tricks like flambe over the counter. In teppanyaki (iron griddle) cuisine, the tastes of ingredients are condensed to be served in the best condition to the customer. In this cuisine, the deliciousness of the ingredients themselves is most important. We use only seasonal and fresh materials and the best beef with moderate fat. We cook in an open kitchen and customers are at the counter table in front of us. This dish utilizes the intense sweetness of the original flavor of soybeans. The owners also suggest selected food and alcohol pairings.
