MARUTO soy sauce is made from native soybeans and wheat grown in Nara Prefecture, brewed with yeast that has been kept alive for 300 years. With a mild salty taste and rich flavor, it has a gorgeous aroma when freshly made. To enjoy the aroma of freshly made soy sauce, "Otsukuri (sashimi)" is recommended. For the soup stock of the bowls, mild "heated soy sauce" is used. Takikomi Gohan (seasoned steamed rice), cooked with moromi (unrefined soy sauce lees), has a delicious soy sauce aroma that rises once when the lid is opened. The restaurant brings out the flavors of Nara's unique ingredients, such as home-grown vegetables, Yamato beef, and Yamato pork, and adds various expressions with soy sauce. The restaurant is located next to an established meat shop Tengu Sohonten founded in 1927. Most recommended menu is [Hida beef steak] offering a rich umami and tender texture. Also served is [Hida beef shabushabu] for a milder flavor. Single head of cattle from Gifu prefecture is purchased for selected A5 rank Hida beef used in the dishes. Spacious dining space is designed with a stylish, modern Japanese taste. The location is 10 minutes by foot from Takayama station on JR Takayama Main line. [Sushi Fukuzuka] quietly stands in a back alley of Kagurazaka, with a matured hideaway-like atmosphere.  They stock the highest-grade [Harakami Ichiban (the fattest tuna)] from a renowned wholesaler [Yamayuki]. Enjoy the freshest domestic tuna of the day, caught at Nachikatsu-ura in Wakayama prefecture, Ishigaki-jima Island in Okinawa prefecture, and Oma and Minmaya in Aomori prefecture. They offer a very luxurious assortment with five kinds of tuna to compare; [fatty tuna of the belly part], [fattiest tuna of the belly part], [tuna marinated with soy sauce], [kiwatoro (fatty tuna from the edge of the back)], and [fatty tuna of the back]. They prepare them very carefully to offer [the ultimate savory taste], by varying the temperature of each cut and cutting several times depending on the cut, etc. They offer them with slightly hot rice, of 50 °C, with which you will understand why they stick to the best temperature and aroma.
