We specialize in our rare cut of Matsusaka beef. The surface of this fresh meat is lightly seared. With its soft, pleasant taste and flavorful meat, the dish is extremely popular. This sushi has exactly the right amount of flavor, and accepts no substitutes in any aspect of the preparation. The apparent simplicity is exactly why it is so difficult to prepare. Just as my father made sushi for over 30 years, I continue to devote myself to it tirelessly every day. I'm taken by the beautiful coloration and juicy meat of the Sangenton pork, and have it delivered directly from Kagoshima. I personally oversee which tuna to buy from the Tsukiji market. I can't make any compromises if I want to have delicious ingredients in stock.

A cleanly gutted fresh Sea Bream is packed into a salt filled kettle along with egg whites and cooked in the stove. The juices do not flow away even while cooking so there's maximum flavor retention, allowing the final sea bream to be soft and juicy with a hint of sweetness. People all have different tastes, and so I always try to satisfy them, ranging from lovers of sashimi to lovers of boiled vegetables. As a man who grew up in a fisherman's household surrounded by seafood, I'd like my customers to enjoy food that utilizes these ingredients to their best. I've prepared several dozens of delectable recipes based on my senses, honed over many years. Our seating can be rearranged for large banquets, so rest at ease. With seafood that would be okay to eat as sashimi, local vegetables and more, about 30 varieties of kushiage (fried skewers) made using fresh ingredients are available on the daily specials menu. With delicious raw ingredients undergoing careful preparation to make even more delicious kushiage and toppings, each one is uniquely spectacular. In addition to the ingredients obviously being fresh, we're also particular about the breading. The oil used is a house blend, and the fine panko breadcrumbs have to be light and crispy, so you can eat plenty without it weighing down your stomach. We don't just line up all the skewers on a plate at once. We set them on the counter one at a time at the pace that the customer eats, so you always enjoy delicious kushiage that's just been fried. With a spacious counter, this is a comfortable, relaxed restaurant. The calm atmosphere makes it a refuge for adults. We can handle dates, business meals and other various situations.

This dish allows you to enjoy the classic foie gras and sauternes pairing in a Japanese style. The foie gras comes coated in an aged balsamic vinegar-based sauce. The dashi (Japanese broth) is a melange of local flavors. Experience the harmony yourself. The hand-made, fragrant udon noodles are made using wheat flour originating from the Tokachi plains. The flour was chosen, after years of research, for the specific size of its grains. We say "finds gratification in the daily improvement one aspires for in cuisine." My mackerel is freshly grilled in the store right after ordering. The well-marbled body is carefully roasted to draw out its delicious flavor and aroma. I have an obsession with using Koshihikari rice, directly shipped from farmers in my hometown of Toyama prefecture. Some of my regulars say that they come just to eat this. I offer it in my store's set meals as well as other meals, so you can enjoy it in many ways. The tone of the saxophone complements the master's guitar to give you the ultimate pleasure! It's different from normal karaoke; the live performance lets you feel like you are giving a concert with a band.
