Mr. Kitano says, "buying a whole cow that you have fallen in love with on your visit to the ranch not only improves the quality and taste level of both restaurants but also broadens the menu by enabling the use of popular parts such as filet and sirloin, as well as all other parts from horumon (innards) to halami (skirt steak) while keeping the price low." Visitors can also enjoy Mr. Kitano's unique twist by adding Italian elements to appetizers, cold noodles, and other a la carte dishes.
