Buy local, eat local is our motto, so we top our pizzas with Takayama cheese and basil, among other fresh local produce. It goes without saying that we use Hida beef, but we also recommend our locally-produced Okuminokojidori chicken. Enjoy a superb texture and a rich, savory flavor. We aim to be the best restaurant in town - that's why we called ourselves "Dining Bar YZ". With that in mind, we keep our atmosphere casual, and our service carefully attentive. We strive every day to make this a place that locals love. We have customers of all types, from solo diners to ladies' parties, and we have both counter and table seating to accommodate them. Our maximum seating is 20, and we do accept reservations, which we recommend for events.

Our specialty is beef tongue served with a luxuriously thick cut. The thickness of the tongue, its brittle texture, and the fat that spreads inside the mouth may be too addictive! We also offer specially-picked, fresh, high-quality black-haired Japanese beef, and our kimchi (fermented vegetables), tare (sauce), and dressing are all homemade. In order to satisfy our customers, we try our best to provide large portions for a fair price. Course menus start from a very reasonable 2,000JPY! The seats are hori kotatsu (dug-out heated seats), in which you can freely stretch out your legs, and there's enough space for a huge banquet. There are also table seats for various occasions such as family gatherings and couples on dates.

Almost all of our customers order our star product, Kishu Charcoal grilled Yakitori. We use Okinawan Nuchimaasu sea salt and a blend of five other salts, blending all with our original seasoning. Best enjoyed almost rare White Chicken Liver" is our number one recommendation which use chicken such as the soft, sweet Oyama Chicken from Tottori Prefecture, and Miyazaki Prefecture's Hinata Chicken. Experience the popular Yuba Soba (dried tofu noodles).

Light, yet substantial. The shrimp and yuba broth brings out the flavor of the eggplant. Namafu (wheat starch) has a pleasant springy texture and is highly nutritious. Enjoy a range of namafu dishes, from the basics like namafu dengaku (namafu baked and coated with miso) or deep fried namafu, to original creations like eggplant and namafu miso gratin or namafu fried in breadcrumbs. Ginnan uses traditional ingredients, like yuba, which gives it the air of a classic Kyoto restaurant. However, the staff members work hard to make sure that young people also feel welcome. Home of the winner of the 25th HBA competition, Waduro is a bar made by a lady for ladies.

This cocktail was my own invention and allowed me to become the first woman to win the competition. I loved the sound of the word, expanded the concept from there, and finished it refreshingly with a liqueur base. There is always a varied collection of fresh fruits and vegetables lined up on the counter. The matcha used for Waduro is also carefully selected. I am very particular about the raw materials. I value communication with my guests, taking care to see their point of view and understand the situation. I strive for a comfortable environment so that they will want to visit again. Based in Fukuoka, the main shop's dug-out seating lets you share a delicious meal in comfortable surroundings.

This gem of a dish starts with a chicken broth that's cooked for over half a day and then combined with beautifully prepared offal, cabbage and Chinese chives and finally boiled once more. You can enjoy this dish with our house sauce, Japanese citrus and chili pepper sauce or shichimi, a Japanese spice. Before serving it to our customers, we boil the extra fat off our fresh, home-grown offal. This is so that our customers can season the dish to their liking after it's been boiled. To make it so delicious, we spend plenty of time preparing the offal beforehand. We use only the freshest domestic ingredients along with seasonings from Kyushu. Using cabbage from Aichi Prefecture and local green onion from Kyushu, we provide a deliciously genuine taste. Our shop is perfect for those who want to share a delicious meal with their loved ones. Because we offer dug-out seating, you'll be able to enjoy a comfortable time with us no matter how long you stay.
