Japanese Cuisine Yamazaki

Tokyo Station, Tokyo

We are the only restaurant in Toyama and Ishikawa prefectures that obtained the three stars. We express the seasons of Toyama with our Japanese dishes.

[Japanese Cuisine Yamazaki], one of the best Japanese restaurants in the Hokuriku district, is gathering attention by gourmets all through Japan with the motto of [seeking for the dishes that can be found only in Toyama]. Mr. Koji Yamazaki, the owner, decided to be a chef when graduating from junior high school and had training at renowned restaurants in Tokyo and Osaka, then came back to Toyama to open this restaurant. He says "when I was training I always visited renowned restaurants on my days off such as [Sakurada] and [Arashiyama Kitcho] to study their tastes which is a good memory for me now". After spending his days off to visit such renowned restaurants, he noticed that it was important to follow the fundamental factors of Japanese cuisine such as following the basics thoughtfully and cleaning carefully. Therefore, our one and only motto is [to express the seasons of Toyama] with the essence of Japanese cuisine.

Seiryu Unagi Tsukishima Todai Akamon-mae Branch

Ueno/Yanaka, Tokyo

Customers can enjoy large Japanese eel cooked in the Kanto style along with delicious rice at reasonable prices.

In Japan's Edo era (1603-1867), the eel was a B-class food eaten at street stalls. Eel used to be called the 4 Specialties of Edo, along with sushi, tempura, and soba. Commoners freely bought and ate eel skewers sold at street stalls. However, before anyone realized it, eel became a high-class ingredient and a menu item only eaten on auspicious and special days. But eel was originally a food eaten by commoners. It was a vital food culture Japan boasted and could enjoy casually. So this restaurant aims to create a new place to drop by freely. Their concept is to provide delicious and filling Japanese eel at half the price and 1.5 the volume of other eel restaurants.

Kichiji Kanizo is a hideout for adults in Nakameguro. One menu option is a luxurious hot pot using "live horse crabs directly shipped from Hokkaido." With the carefully prepared spiciness of daikon (radish), the sweetness and texture unique to horse crab, miso and butter make the taste rich, and the savor of crab innards adds to make this menu a superb hot pot.
