A la vapeur means "steamed." Kinmedai (red bream) is steamed rapidly at 120°C/250°F, preserving its savoury flavor and giving it a nice plumpness. They grow their own herbs and purchase only the freshest, best-tasting vegetables available. Limiting their use of animal fats like cream and butter, they strive to bring out the natural taste of the ingredients as much as possible. This restaurant has its own style of hospitality.
