Rikyu's beef tongue is deeply infused with rich flavors before being grilled to perfection over a charcoal flame, searing the surface to a crispy finish while retaining the juiciness of the meat inside. After the meat is cut and salted, it is then aged to enhance flavour and tenderness. The meat is so tender that any size can be eaten easily. At Rikyu we never use machines; every step is done by hand. The reward for this honest work is a fantastic texture throughout the meat. In order to offer consistently high quality beef tongue at Rikyu, we are constantly giving birth to the best ways to produce the most delicious food. For our "Shrimp & Fromage Blanc," we keep the shrimp faintly warm after grilling it to the perfect degree. Then we garnish it with chilled citrus zest. Both the appearance of the dish itself and the plate its served on emphasizes the color white, with the food placed on the edge of the plate. We get our stock of organic mini-tomatoes from Yoshimori Ranch in Hokkaido, and we don't do any preparation to enhance their flavor - we serve them raw. Our chef is a professional, so it's a given that he pours all of his effort into every dish. At our restaurant, we offer a comparatively large number of dishes in our course meals. One of the specialties is a dish where they carefully prepare "Ayu (sweet fish)," a fish that has been popular in Japan since ancient times. It presents seasonal French-based course meals paired with Japanese sake and wine. Katsuyama Shuzo, the Date clan's official brewery with more than 320 years of history, specializes in a fusion of the SAKE scene from overseas and is well known for its collaboration of fine alcohol and gastronomy. To fully experience the best of it, it is recommended to pair dinner and lunch course meals with "5 kinds of Katsuyama" or "3 kinds of Katsuyama, and 2 kinds of wine" and so on. varm in Kitasendai is a hybrid restaurant with wood-fired cooking, bakery, and roasted coffee. Since its establishment in 2022, the restaurant has been attracting an increasing number of fans by offering three different tastes produced by "heat," meaning the restaurant's name. Chef Akutsu, who trained in Tokyo and France and opened his restaurant to run a restaurant with his family in his hometown, is the master of the wood-fired grill. Based on the modern Basque and French cuisine that he gained experience in, he presents a variety of dishes that bring the flavors of the ingredients to their peak with the power of an open flame. Ingredients are selected from the Tohoku region, and he is exploring the new "Tohoku Terroir." You can enjoy the best of it in two different dinner courses.
