When I returned to Sendai after my training in Tokyo had finished, I rediscovered the abundance and splendour of ingredients from Miyagi prefecture. I want to communicate the deliciousness of Miyagi prefecture's produce not only to locals, but to people who have come to visit Sendai from afar. My goal is to have customers feel they were glad they came when they leave the restaurant. The fish is prepared by first salting it for a day and night. Then after washing away the excess fishy odor, the fish is marinated in saikyo (Kyoto-style) miso for four to five days. It is then carefully slow-grilled, positioned relatively far from a strong flame. The result is an abundance of flavor, densely packed within its flesh. We receive delicious seasonal items from all over Japan, and primarily from Miyagi prefecture. We can't explain our selections in a word, but you'll understand them after just one bite. Our restaurant uses fish caught the same day in nearby waters, so it's a great feeling to be able to cook the whole fish for a dish like "Acqua pazza." This is a colorful meal, where the flavors of the fish really are splendid. The pork is Hoei pork from Hokkaido-low in fat and calories, while being high in protein. The salt we use is Mediterranean crystal flake salt. Odorless Hoei pork tastes better with salt than with sauce, as the former brings out the sweetness of the meat. The customers don't just pick the brand of the wine they order. We suggest the kind of wine that goes well with the ordered food, or the food that goes well with the ordered wine. In this dish, thickly-cut sweetbread is scored to preserve the distinctive flavor of the entrails and retained by lightly searing. The chef's expertise is clearly displayed in how he utilizes cutting techniques to influence texture. The yakiniku (Japanese BBQ) dipping sauce is a secret recipe handed down from the chef's grandmother. The intense sweetness of the dressing combines nicely with the meat. The kimchi (fermented vegetables) made by his mother is made from ordinary ingredients but has an exquisite spiciness which is delicious. Because the quality of the meat is paramount, patrons are encouraged to try samples of the assorted platters before ordering and to order only the meats that they like.
