Our restaurant uses fish caught the same day in nearby waters, so it's a great feeling to be able to cook the whole fish for a dish like "Acqua pazza." This is a colorful meal, where the flavors of the fish really are splendid. The pork is Hoei pork from Hokkaido-low in fat and calories, while being high in protein. The salt we use is Mediterranean crystal flake salt. Odorless Hoei pork tastes better with salt than with sauce, as the former brings out the sweetness of the meat. Our ajillo dish presents the authentic flavor of Spain in a way that suits the Japanese palate. We emphasise the aroma of the garlic and olive oil, and at the same time we bring out the umami (pleasant savory flavor) of all the ingredients. Salt and water are the basic ingredients in any cuisine. Starting with these essentials, we intently focus on every detail for all of our dishes. We use Akoshi salt, a natural salt with a sweetness that gives weight and depth a food's flavor. We use water from a traditional style purification system, which really brings out the flavor of the ingredients.
