Our head chef has never had any training in France, and as such his offerings are true to his own culinary sensibilities and are refreshingly original. He cooks with his own sense of taste and style, honed on Japanese ingredients and flavors, perfectly suited to a distinctly Japanese climate. "I want to serve my guests the best-tasting meals possible, and with fruits and vegetables that means at their freshest." With that in mind, our chef buys local Yokohama produce. He also has seafood delivered directly from the Miura seashore two times a week. Local food for local consumption is our motto. From a selection of about ten types of homemade processed meat, four to five are chosen for the "charcuterie plate." Today we are serving deer and foie gras pate, rabbit and pig trotter terrine, as well as duck liver mousse on one plate. The relish and the salads use Kamakura vegetables purchased from the Kamakura farmers' market.
