Our 'Tamba Free Range Chicken Panache with Exquisite Organic Vegetables' is a luxurious treat born from an encounter with a supplier in Kitatamba, which lets you savor every part of the chicken on one plate. But when you say Kobe, you think beef, and I also offer the choicest lean A4 to A5 grade sirloin cuts. With just the right amount of marbling and low melting point of fat, my beef possesses a refreshing aftertaste and sits lightly on the stomach. I'm the chef as well as the general manager, so I start my morning by looking over the guests' comments, as well as spending my days observing their reactions in the restaurant in order to offer meals and service that are a half-step ahead of their desires. All the team members work together and create [our dishes] based on Spanish cuisine. Enjoy the taste of the 3-star restaurant in Kobe.

Chef Fukumoto considers himself to be athlete-oriented. Through his 8-year experience in Italy and Spain, he has obtained the skills enabling him to create the dishes of [Ca sento]. He says, [Our dishes may be categorized in Spanish, but when you try them, you might feel it's unlike. For example, Japanese shrimps are different from Spanish ones.] Our dishes bring out, or even improve the original tastes of the ingredients, for example, a dish uses local harvested tomatoes sent from [Inagaki Farm], which features strong sweetness and sourness. Chef Fukumoto says that only he himself can't create these dishes without the producers and even the kitchen layout is taking a role as one of the factors. The policy of the owner is [to do everything by himself]. To realize it, he simulated everything including the size and shape of the restaurant and kitchen, the shape and length of a counter, the number of seats, and layout, for 2 years prior to the opening of the restaurant. He cooks in a traditional way; for example, [Meat Pate in Country Style], a standard recipe using livers of pork and chicken and fat mainly is to be left for at least 10 days. While containing high salt concentration, it perfectly goes with wine. The wish of Mr. Kishimoto, the manager, chef, and dish washer at the same time, is to create dishes [people sometimes would like to have so badly] with wine.

Kobe Kitano Sow is placed on Hunter Hill in Kobe Motomachi, where sophisticated shops line the street. As the name means "a pairing of two elements," the restaurant offers unexpected combinations of ingredients. As you go up the stairs from the first-floor bar to the second floor you enter a sushi restaurant adorned with the scent of white wood. The refined space has seven counter-seats and one private room. What's offered is the "Omakase Course," consisting of seasonal dishes and sushi. It's characterized by the abundant use of locally caught seafood from Akashi and Awaji, creating a sense of seasonality. Sake or wine is recommended as a matching drink.
