Very skilled preparation brings out the incredible flavors of the slowly-matured beef tongue. We are so selective in choosing the meat that one head of beef will provide only enough meat for 1 or 2 people. It is so good you'll feel like you have never had it before! In addition to the selectivity of the beef tongue, our specialty is choosing the best quality and seasonal ingredients from Hokkaido. Our method of cooking really brings out the deep, natural flavors of the ingredients. No matter which items you choose, the rich flavors are sure to satisfy. On top of the the careful selection of ingredients, fun conversation, and an at-home atmosphere is our goal, which means that even if you come alone you can still spend time with us and have fun. There are many regulars who order the Chef's recommendation without even looking at the menu. He is a master who never compromises on seasoning or taste. Marinated overnight in a special sauce and double-fried the next day. Added to the crisp aroma and the refreshingly sweet sauce, spicy pepper completes the harmonious trinity. For our lamb meat, we use the shoulder roast of delicious, high-quality New Zealand bred lambs. With few of the peculiarities characteristic of lamb, it's famous for how easy it is to eat. For our Sangenton pork, we use pork belly from herb-fed pork raised in Canada. Both are easy to eat and so delicious that your chopsticks will move on their own. [Otaru Masazushi Main Branch] is located on Otaru Sushi Street, which is lined with well-established sushi shops. They have strived to protect traditions and ensure continued careful selection of ingredients to better present the [relaxation] of a meal to our customers. In order to be able to reliably offer [Maguro] (tuna) year-round, each November (the prime season for tuna) they buy up carefully chosen tuna of at least 300 kg. The fish, procured from the Atlantic Ocean near Canada, is known to be some of the best in the world. Just one taste and you'll never forget the sweetness and tenderness that makes it practically melt in your mouth. They have a full selection of multi-course meals, which they recommend for business meetings or dinner parties. Prepared gradually over time, our stewed cuisine has won admirers. We remove excess fat to make it light and refreshing, never too heavy. A robust salty-sweet flavoring makes this a good match for both rice and sake. We procure seafood with a discriminating eye, eager to use only the highest quality ingredients. We make an overall determination based on key factors such as the firmness of the flesh and the fineness of the shellfish grain and how springy it is. A friendly place with delicious local delicacies such as the oyster in the shell cooked over coals -- just one taste and you'll know the difference.

We take high quality name-brand oysters like Maruemon and Kakiemon from Akkeshi and cook them in their shells over coals. A special technique is required to remove the oyster muscle using heat alone, but we have many years of experience in this regard, so please let us do all the work. Hokkaido is home to numerous delicious ingredients, and we focus on procuring the best of what the area has to offer, including whey, a byproduct of cheese production. One unique dish we offer, for instance, is our "whey mackerel", where mackerel is marinated in whey. Home of the winner of the 25th HBA competition, Waduro is a bar made by a lady for ladies.

This cocktail was my own invention and allowed me to become the first woman to win the competition. I loved the sound of the word, expanded the concept from there, and finished it refreshingly with a liqueur base. There is always a varied collection of fresh fruits and vegetables lined up on the counter. The matcha used for Waduro is also carefully selected. I am very particular about the raw materials. I value communication with my guests, taking care to see their point of view and understand the situation. I strive for a comfortable environment so that they will want to visit again. When a lamb reaches 10 to 16 months of age, it grows its second set of permanent teeth. This is considered the best time to enjoy lamb meat, which is then much richer and flavorful than traditional mutton. The animals used are bred specially for their meat, combining an English strain with a strain known for its fine texture, soft meat, and flavorful juiciness, resulting in a luxury meat produced and sold in Japan in limited quantities. This meat comes from our in-house farms, allowing us to offer it at a reasonable price. Our head chef's specialty is a grilled fish carpaccio that combines Western flavors with Japanese ingredients. Fresh dashi (Japanese soup stock) is made in-house daily from Rishiri kelp, and is the secret to bringing out the best in the dish. All effort is made to procure ingredients from Hokkaido only when they are in season. What's more, every angle of the dish is designed to surprise the diner: its texture, portion, and display is delicately planned and balanced. Our popular Deluxe Caesar Salad dish also has a unique crumbled cheese quattro to add a surprisingly crispy texture. The boss's recommendation and most popular item-Ezo nigiri sushi which includes sea urchin, Ezo abalone, king crab, and fatty tuna. This gorgeous nigiri sushi, as well as the salmon roe donburi (rice bowl), are sure to satisfy. Contains ten distinct flavors altogether! The taste of the sea urchin itself is delicious. We only use salt water urchin. Eating hairy crab can be difficult, but the meat is dressed with miso. It has a rich flavor and is truly the best way to eat it. Customer satisfaction is of fundamental importance as we uphold the traditional customs. With plenty of parking as well as a spacious interior, you are welcome to come with your family and relax.
