Seeking to make patrons' dining experience a relaxing and quiet affair, we have adopted a full booking system, so all seats must be reserved in advance. Our private Japanese-style room looks out onto a stone garden and is perfect for entertaining clients. In the heart of Yunokawa hot spring, [Sushi Restaurant Kihara] situated at the best location overlooking the Tsugaru Strait right in front of your eyes. In the restaurant, Aomori hiba solid plate counter creates a dignified atmosphere. On a clear day, the view of the Shimokita Peninsula creates a refreshing atmosphere. In this atmosphere, sushi is served with selected local ingredients including seafood supplied from the chef's hometown former Minami Kayabe-cho. 80% of the sushi at the restaurant is in the authentic style, but chef's creed of [local specialty sushi] creates original dishes such as gizzard shad lightly washed with vinegar and rolled with local specialty kelp. After 20 years in Hakodate, the restaurant serves Hakodate style sushi based on Edo mae style.

Our "Charcoal Grilled Clam" was born out of one sole desire: to create an authentic clam dish. We lock the clams with a joint, so that they won't open as we cook them, further concentrating their flavor. An exquisite taste, full of aromas that expand in your mouth-that's what it is all about. Fresh clams are shipped to our restaurant daily directly from Kujukuri in Chiba Prefecture. We also import seafood directly from a trusted supplier in Amimoto. The freshness of the clams is important, but size also plays a crucial role: only clams of an adequate size are used in our "Charcoal Grilled Clam." Our restaurant is centered on course menus, but many of our regular customers also order our dishes a la carte, ordering only the soup on a cold day, or only our clams and wine.
