Kyoto-style Grilled Sablefish with Miso Marinade, a gently delicious flavor that stirs the heart

The fish is prepared by first salting it for a day and night. Then after washing away the excess fishy odor, the fish is marinated in saikyo (Kyoto-style) miso for four to five days. It is then carefully slow-grilled, positioned relatively far from a strong flame. The result is an abundance of flavor, densely packed within its flesh. We receive delicious seasonal items from all over Japan, and primarily from Miyagi prefecture. We can't explain our selections in a word, but you'll understand them after just one bite. Be sure to savor them when you come to our shop. All of our ingredients are carefully selected based on factors such as the season and the area in which it is produced. An example would be the horse-meat sashimi. Exceptionally-fresh fish caught in the waters around Sanriku is assorted after having been cut and prepared for the best flavour. Beautifully arranged to make the food look even more delicious, this dish truly shows off my thoughts and handwork. When I returned to Sendai after my training in Tokyo had finished, I rediscovered the abundance and splendour of ingredients from Miyagi prefecture. I want to communicate the deliciousness of Miyagi prefecture's produce not only to locals, but to people who have come to visit Sendai from afar. My goal is to have customers feel they were glad they came when they leave the restaurant. Wanting customers to return home satisfied, I put importance not only on the food, but also the service and atmosphere. After being cut, the meat is then cured, creating a unique taste and feel. At Rikyu we do not mechanize this kind of work, so it is still done by hand. The meat is exquisitely tender all the way through, thanks to our adherence to traditional curing methods.
