This sushi has exactly the right amount of flavor, and accepts no substitutes in any aspect of the preparation. The apparent simplicity is exactly why it is so difficult to prepare. Just as my father made sushi for over 30 years, I continue to devote myself to it tirelessly every day. I'm taken by the beautiful coloration and juicy meat of the Sangenton pork, and have it delivered directly from Kagoshima. I personally oversee which tuna to buy from the Tsukiji market. I can't make any compromises if I want to have delicious ingredients in stock.

Obtained directly from Kyoto, I serve both hikiage-yuba and sumiage-yuba together in this dish. The mild flavor of my homemade kyo-yuba is exceptional, and it's made entirely with soy beans grown in Japan. Please try this one-of-a-kind dish. I make my sashimi by taking my ingredients straight out of the fish tank and swiftly preparing it on the spot. In the juiciness and consistency you can taste the delicious essence of the fish; it's no less than the flavor of freshness itself. Not only that, but I carefully select my ingredients, getting them directly from places like Hokkaido and Kyoto. Located on the first floor of Plena Makuhari, a gourmet and shopping complex just one minute from Kaihin-Makuhari Station. It is a seafood izakaya specializing in dishes made with fresh, seasonal fish directly from Toyosu. The menu offers sashimi with the freshest ingredients, grilled and deep-fried dishes that bring out the best of each ingredient, and a la carte dishes featuring meat and vegetables. It can be recommended for people of all ages. There are also many seasonal menus and seasonal recommendations. 20 to 30 varieties of sake are selected from all over Japan, and various other alcoholic beverages are prepared. We use Koshihikari from Sawara (made by Mr. Kotaro Shiina) and rice from the pioneer of serial rice, Ishikawa Shouten. Enjoy the great taste of superior ingredients. With fresh, in-season vegetables delivered directly to us from Takahashi's farm (Yasaemon) in Yachiyo City and meat sourced from France and Italy, we are extremely particular about our ingredients. Whilst placing a lot of emphasis on the taste of Japanese ingredients, we carefully combine them with meat from Europe. The sauce, which we fastidiously prepare, brings out the flavour of the ingredients. We recommend enjoying the dish with wine. You can enjoy delicious Italian food without having to travel into the busier parts of the city. We aim for an atmosphere similar to being a guest at someone's dinner table.
