45 years ago, "Taiwan Ramen" was created by the founder of this restaurant. The broth is made from chicken bones and minced meat, with Chinese chives and plenty of chili pepper completing the dish. Its selling point is its uniquely delicious after-taste, and it's a must-try on your next visit. A popular item off of the appetizer menu is "Kobukuro", boiled piglet uterus. You'll get addicted to its crunchy consistency and extremely spicy flavor. It also goes very well with Japanese sake (rice wine). We have a plentiful repertoire with over 100 items on our menu. Because we serve a large number of children at our restaurant, we are able to customize the spice level of about 80 percent of our dishes. For our miso offals, we use miso sauce made by using Hatcho miso as a base, and then add brown sugar and sake. It's mixed with the meat to avoid it getting dry and placed before the customer. The grilling tools are a charcoal brazier with special Itami charcoal. A delicious way to eat it is to grill well, and then add a dash of seasoning. The restaurant owner, and head chef, always pickles fresh cucumber with rice bran, kombu kelp or chili pepper the night before.
