ShinShin is a well-known ramen place in Fukuoka that always has a long line of people. They use a tonkotsu (pork broth-based) soup, but they blend it with chicken and vegetable soups, so the soup has a nice and light aftertaste. The noodles are thin, so it is easy to eat, especially for women who don't usually eat tonkotsu ramen. This is a delicious and light tasting Hakata ramen.

2. Isshin Furan - Daimyo Main Branch

 

Isshin Furan (Daimyo Main Branch) is a ramen restaurant with a lot of long-time fans. It is obvious that their soup made with domestically produced pork of the highest quality takes a lot of time and care to make. Since it doesn't use lard at all, it is extremely savory and fragrant. Their signature meals include: Their rich and delicious “Black Tonkotsu Ramen”, salt-flavored “White Tonkotsu Ramen”, “Red Miso Tonkotsu Ramen” made with 2 different kinds of miso, and “Gold Negi Ramen” made with Okinawan salt (sundried concentrated salt that is then boiled until crystallized). The full name of this restaurant is Mengekijo (Noodle Theater) Genei. As the name suggests, there are theater-like steps inside, and it does not look like a ramen restaurant. They serve a variety of ramen, such as “Genei-ryu Ramen”, “Shiokaoru Shoyu Ramen”, and “Tantan Noodles”. The soup is semi-clear and made with carefully selected ingredients, so it is light, yet very rich in taste. It is located in a nice and quiet area, and it is loved by a lot of people.
