1. Hakata Ikkosha Daimyo Honke 

Hakata Ikkosha is famous for rich tonkotsu (pork bone) ramen. Both the ramen and tsukemen are popular. Its rich soup is made of 3 kinds of local soy sauce and over 20 kinds of spices. 5 kinds of seafood stock are blended in it as well. It goes well with the noodles, so you'll want to come back for more. The special char siu (roast pork) soaked in their secret sauce is incredibly delicious.

2. Ganso Nagahamaya 

 

Ganso Nagahamaya has been a famous ramen restaurant for a long time. As soon as you enter the restaurant, your ramen will be served. It is old-fashioned tonkotsu ramen with few toppings. Its ramen is so simple that many people come to eat it for breakfast in the early morning. It is a long-established restaurant known by everyone in Hakata.

3. Shuchan Ramen Head Shop 

 

 

Shuchan Ramen is said to be the restaurant that made Hakata tonkotsu ramen become widespread. It serves simple tonkotsu ramen with green onion and char siu as toppings. Its rich tonkotsu soup doesn't have a heavy aftertaste, while the char siu is soft and simply seasoned. The small gyoza dumplings are also irresistibly delicious.

4. Hakata Ramen Shin-Shin Tenjin Main Shop

 

Hakata Ramen Shin-Shin is gaining popularity every year. It serves simple tonkotsu ramen which is easy to eat. The thin noodles go well with the soup, and char siu shimmered in secret sauce is soft and creamy. Since it started as a food stall, there are various dishes other than ramen, such as chanpon, one-bite dumplings, and fried rice.

5. Isshinfuran Daimyo Main Shop 

 
 

There are 4 flavors of ramen of Isshinfuran Daimyo Main Shop: black, white, red and gold. Black is Isshinfuran type of tonkotsu ramen. White is salt tonkotsu flavor seasoned with salt tare sauce. Red is rich miso flavor using wheat miso, red miso, white miso and koji (malted rice) miso. Gold is green onion salt flavor. Every ramen has a delicious rich soup, so you can choose according to your taste.

6. Men Gekijo Gen'ei 

 

Men Gekijo (Noodle Theater) Gen'ei is a theater type ramen restaurant where you can see the process of making ramen in a restaurant with steps, so you will feel as if you are in a theater. Gen'ei style ramen with no additives, no chemical seasoning, and homemade soy sauce is simple but you can enjoy its richness, and it is delicious. Their tamagokake gohan (raw egg on rice) using carefully-selected eggs is also excellent.

7. Ramen Jinanbo Hakata Main Shop 

 

 

Ramen Jinanbo has won the first place in Fukuoka Ramen General Election in the past. It uses a tonkotsu soup without a smell, so it is popular among not only men but also women. Thin straight noodles go extremely well with the carefully-made mild soup. The Hanjuku Nitamago Ramen with a soft-boiled egg on top is recommended.

8. Toritori Kenkyudan

 

Toritori Kenkyudan is a delicious local chicken shop, and its ramen is served in a fine white soup. There are 3 kinds of ramen: salt ramen, soy sauce ramen, and chicken white soup ramen. All of them have condensed chicken flavor, and the soup is perfectly rich without heavy taste. It is Hakata local chicken ramen which has a different flavor from tonkotsu.
