Anmitsu is a wagashi of small square pieces of agar (a gelatinous substance made from seaweed such as red algae), an (azuki beans cooked with sugar), and a syrup made with sugar and water.
Strawberry and Shiratama Anmitsu, which is a modern take, has an anmitsu jelly made from agar and brown sugar syrup on the bottom and fresh cream, strawberry, satsuma mandarin oranges, and shiratama (balls of boiled rice flour) on top.
