[Sushi Fukuzuka] quietly stands in a back alley of Kagurazaka, with a matured hideaway-like atmosphere.  They stock the highest-grade [Harakami Ichiban (the fattest tuna)] from a renowned wholesaler [Yamayuki]. Enjoy the freshest domestic tuna of the day, caught at Nachikatsu-ura in Wakayama prefecture, Ishigaki-jima Island in Okinawa prefecture, and Oma and Minmaya in Aomori prefecture. They offer a very luxurious assortment with five kinds of tuna to compare; [fatty tuna of the belly part], [fattiest tuna of the belly part], [tuna marinated with soy sauce], [kiwatoro (fatty tuna from the edge of the back)], and [fatty tuna of the back]. They prepare them very carefully to offer [the ultimate savory taste], by varying the temperature of each cut and cutting several times depending on the cut, etc. They offer them with slightly hot rice, of 50 °C, with which you will understand why they stick to the best temperature and aroma. Instead, the dishes centers upon aged whitefish sushi invented by the owner Mr.Kimura, after 6 years of experiments. For instance, [Striped Marlin Matured for 60 Days] releases a subtle scent of fermentation resembling coffee and unique umami. What firmly supports this taste is vinegared rice consisting of rice with minimum moisture and vinegar from [Iio Brewery] from Kyoto. On the other hand, appetizers designed with playfulness are unique and exquisite. [Sushi Kimura] is a representation of Mr.Kimura's spirit, creating the groundbreaking genre of sushi.
