Our "Bonito Tataki (seared fish) with the colors of early summer" is a very seasonal dish, in which dense bonito is lightly seared to a tataki. It's enjoyed with homemade ponzu made with "Hebe vinegar," a Hyuga specialty. You can enjoy varied flavors and textures such as urui (hostas), bamboo shoots and micro tomatoes in this colorful dish. The bonito begin their journey in Kyushu and make their way north along the Pacific Ocean. In order to bring out the delicious flavor of the fresh meat, the surface is briefly seared in direct, strong heat. It is not iced; it is cut and brought out while still warm. Fresh bread and organic vegetables together with a versatile wine selection

Since our alcohol selection is mostly wine, we use our own original recipes to make a large selection of homemade bread to pair with wine or serve as a palate cleanser. Furthermore, we don’t have a wine list here, nor do we offer descriptions. This is because we take a lot of care in finding the best wine for each customer’s taste. We take the time to listen carefully to what kind of flavor each customer prefers and then use that to match them with a delicious wine to enjoy. We also use seasonal organic vegetables as much as possible with our food, as well as offer a selection of hard to find vegetables like shio (salt) tomatoes, all of which can be ordered in whatever amount you prefer. The dining atmosphere we provide here is perfect for enjoying our wine and kushiage (fried meat/veggie skewers) in comfort. The calm and relaxing atmosphere inside is well-suited for a date, too. We also offer a dessert course with a combination of three different items to enjoy during parties and other events.

Our restaurant is located on a small alley branched from Hanamikoji-dori Street. We are specialized in tempura for 3 generations, including the current owner, Toshinori Sakakibara. This hideout-like restaurant was not well known before, however we have obtained more layers of fans since we won the stars, and is currently recognized as a dream restaurant among people inside and outside Japan. In spite that we have only counter seats, and serve only 1 menu at 12,000 JPY consisting of 17-18 dishes, many people visit us to enjoy our finest [Kyoboshi style] tempura which perfectly brings out the original taste and flavor of the ingredient. Please enjoy our dishes cooked by using traditional techniques, such as a batter without eggs, the original way to fry, and original powdery snow-like salt.

Our appetizer platter features a variety of appetizers that have been carefully prepared to bring out the flavor of the seasonal seafood and vegetables we prepare everything with. Sushi Hoshiyama is located on the third floor of a building in the Kitashinchi entertainment district. It stands still like a hidden-away place, and is an excellent sushi restaurant that has many regular customers. We recommend the classic nigiri. We are particular starting with the rice; we mix red vinegar made from fermented sake (Japanese alcohol) lees into a komai (old rice) blend of rice. The “neta” (sushi topping) is carefully selected from the procurement stage, and then the meticulous work of the sushi chefs brings out the umami (pleasant savory taste). A completely well-balanced nigiri is too delicious for words. There is no doubt that you will be hooked once you try it. The menu - which only features multi-course meals - is extremely varied, with items such as Akashi octopus and amadai (tilefish) included with Edo-style sushi. The seating is counter-only, but the atmosphere should be comfortable even for women dining alone. We hope to see you visit.

Savor the refinement of our European foie gras dishes in an equally stylish atmosphere.

We apply the fundamentals of Japanese cuisine on the foie gras by using yamacha and porcini mushrooms, and add originality through a scattering of deep-fried rice which brings accent to the truffles. Foie gras has been a standard ingredient since the opening of the restaurant and is incorporated into our course menu, which changes monthly. We purchase foie gras from Hungary or France after judging such things as the degree of fattening. Our philosophy is "To think of your partner is to bring them joy", and as such, we feel we want to bring satisfaction to our customers through the unification of food and customer service.
