[Ristorante Quattro Foglio] is 10 minutes walk from Hasuda Station, JR Utsunomiya Line (Tohoku Main Line). The chef, grew up in Hasuda, accumulated experiences as a chef in France and Tokyo and returned to Hasuda to open this casual Italian restaurant. We cook just harvested local vegetables while they are fresh, combining with ingredients from Italy or France. Bagna Cauda is especially recommended to fully enjoy the best vegetables of the season. Pre-fix style lunch and dinner, with which you can combine your favorite dishes are also popular. Lunch set is served from 1,280 JPY per person, and dinner set from 3,780 JPY for two. You can select your dish among pizza (available only for dinner), pasta, and risotto of the month, and there are also various kinds of desserts. Wine is available from 1,680 JPY.

When I began working, my mentor said to me, “Edomae sushi begins and ends with Kohada (spotted sardines).” The balance of salt and vinegar is adjusted every time, depending on the catch of the day. The restaurant insists on using only the highest quality ingredients, which are prepared with care; we choose not to serve anago (eel) if it is not available from the Bay of Tokyo, our normal choice. We also use akagai (ark shells) from Yuriage, Miyagi Prefecture. The restaurant's priority lies in serving dishes that deserve our customers' compliments. Our udon (thick noodles) is truly handmade with no machines used. Even though we can only make limited amounts, we want to stick to handmade udon prepared with freshly ground flour from a mill in Kagawa Prefecture. We optimize our udon’s flavor through a mixture of excellent Australian flower grown specifically for glossy, well-textured udon and special "Sanuki no yume" wheat developed in Kagawa Prefecture, which is famous for their thick “Sanuki Udon” noodles. Our freshly boiled udon and fried tempura is served with care in a handmade Tobe pottery bowl. Furthermore, we offer reasonably priced meal sets with fried tempura, fresh noodles and salad. Our “Matsu Set” features cold zaru udon (plain udon with dipping sauce) for JPY 1,500 (plus tax). This new sushi shop opened up in December 2014 on a corner in a shopping district only a three-minute walk from Omiya Station. The chef himself heads to Tsukiji every morning to hand-pick the ingredients for the day, where each sushi ingredient must display its freshness in its tension and color from every possible angle. In addition to our delicious sushi, we also recommend our a la carte dishes. We devise flavors in a manner that sushi and sake never detract from one another.
