We take pride in all of our seafood. We source our seafood from Suruga Bay and Sagami Bay through wholesalers we can trust. It is all wild caught, and we are thoroughly mindful of season and quality, making our product great whether served as sashimi, grilled, or steamed. Our restaurant in is Okinawa, however we built it on the concept of enjoying the authentic flavors of kaiseki cuisine. For that reason, nearly all of our ingredients come from outside the prefecture. This is time consuming and expensive, but we work tirelessly to get everything just right. Sumibi Yakitori BOND, which opened in Tsubogawa, Naha-shi, in April 2023, is a stylish Yakitori restaurant that overturns the image of a standard Yakitori restaurant. Its yakitori, made with carefully selected fine ingredients and house-made sauce of red wine and fruit, is a new taste sensation that goes well with wine. A wide variety of Italian-based a la carte dishes and blackboard menus are also available, which can be enjoyed with the owner's choice of wines. In addition to various Yakitori skewers, the recommended menu items are "Kagoshima Shukei (special chicken) Tataki" and "Kagoshima Shukei Seared Thigh." The chef, Mr. Murakami, who polished his Edomae sushi skills in places like Tsukiji, Tokyo, prepares specialty Okinawan fresh fish like [Irabucha (Steephead parrots)] and [Ojisan (Five-barred goatfish)] by marinating with miso or irizake (traditional soy source) to bring out the flavors. Fresh tiger prawns, another Okinawan specialty, can be enjoyed as tempura or sashimi as well as sushi. Located near National Highway Route 58, [wa no mi] is a hidden gem where you can enjoy handmade soba, made with the best buckwheat flour in the country, and fresh fish from the Goto Islands in Nagasaki Prefecture.
