Seasonal kaiseki course meals served by expertly trained staff

Our menu changes monthly and revolves around seasonal ingredients. Many customers come each year to celebrate birthdays and weddings, so we vary the menu each year in order to accommodate them. There is always something new on offer for our customers to discover. Fresh yuba (tofu skin) made from soy milk is used in a yuba-sashi, a set of layered yuba arranged mille feuille style. The pieces are dipped in house-made soy sauce for a simple flavor bursting with the natural aroma of the soybeans. We spare no effort in training our staff, hiring etiquette professionals for training in bowing, entering and exiting rooms, and presenting food, among other flourishes. Our waiting staff have all of the professionalism expected of a luxury restaurant. Relax and soothe body and mind in our refined atmosphere. Filled with flavorful and nutritious bounty from both land and sea, our Shippoku cuisine will relax your spirit.

Shippoku-ryori, Japanese original fusion cuisine, starts with “O-hire dozo” (“Please, enjoy the soup”). This phrase is said at a banquet before a toast to soften the atmosphere, and to represent a spirit of hospitality in which the whole fish is prepared for the guest. One of Nagasaki Shippoku Hamakatsu’s famed dishes is our kakuni (braised pork belly) made with Unzen Fresh Pork from pigs raised with love. To bring out the best of this ingredient, we prepare our dishes with the utmost care.

Delicious Shippoku cuisine in an atmosphere that welcomes both regulars and new faces

Onomi is not only said to be the most delicious part of a whale, but is also incredibly rare. It comes as no surprise that fans rave when it becomes available. We serve the meat with our specialty ginger soy sauce which we believe complements the meat rather well. Ever since the beginning of the Meiji era (late 1800s) when bread was quite valuable, hatoshi (shrimp toast) has always been a staple of Shippoku-ryori, Japan’s original fusion cuisine. The dish is a sandwich of white bread and plenty of freshly ground shrimp that’s deep-fried in oil. We strive to create a restaurant where dining is enjoyable, one that welcomes both frequent guests and new customers. It’s important for us to make an atmosphere where new guests may come and converse any time. Some of our guests have been coming for two and three generations down the family, and we also enjoy the patronage of many people who work with seafood.
