Since its founding in 1930, Sumibiyaki Unagi Uotora has served up excellent unagi (eel) dishes dressed with the same secret sauce made from a recipe passed down through the decades. The sauce is distinguished by its sweetness and its rich thickness characteristic of the Chubu region. Unagi grilled over binchotan (a high grade oak charcoal) comes out crisp yet juicy. Cooking catches only from Mikawa or Kyushu, this is a great chance to enjoy carefully selected, fine quality unagi with fat content and skin texture that changes depending on the season. Winter is definitely the best time if you are looking to try fatty unagi. The drink menu in full of options as well, like Ebisu beer or Daruma Masamune sake, that both go great with unagi. Barrier-free seating is available on the first floor, and on the second floor is a tatami room capable of accommodating very large parties. The lively space also has private rooms that are great for various occasions.

Hida Beef Bone Takayama Ramen Matsuri is in a location where it almost melts into the townscape of Hida Takayama. The superb soup made by carefully cooking the beef bones of Hida beef is highly acclaimed. They serve 2 kinds of ramen - a white soup that resembles Tonkotsu ramen (pork bone based) and a clear soy sauce soup. The white soup ramen, which the restaurant wants all first-time customers to try, is a light taste, even though it also has strong, creamy flavors. For customers who want to enjoy luxury, "Hida Beef Special" comes recommended, as it includes roast beef made with A5-ranked Hida beef, leek strips, potherb mustard, boiled bamboo shoots, red onions, marinated boiled egg, and Yuzu citrus fruit. Customers can enjoy the highly exquisite flavors, which are the true value of "Matsuri" ("festival" in Japanese). GYU-SUKE is located in the prime location right by Takayama Station. It offers carefully selected yakiniku with the highest quality Hida beef, aged in a terahertz aging cellar to bring out the maximum umami flavor. The appearance matches the atmosphere of the city of Takayama, and the inside of the restaurant is a sophisticated, one-rank higher space with approximately 100 seats. Both the first and second floors are open spaces with different concepts, and there are two VIP rooms on the second floor, which can accommodate up to 10 people when connected. The beef used for yakiniku is female A5-grade Hida Beef raised in Gifu. The Hida beef is aged in the restaurant's aging cellar using a unique technique. The restaurant also has a lineup of about 500 bottles of wine to go with yakiniku. In addition, various drinks are available, including Takayama's sake.

The restaurant's specialty, called [Matsukiushi Original Unigyu], consists of A5-rank Hida beef steak grilled on charcoal, topped with bafun uni, a species of sea urchin from Hokkaido. This luxurious dish wisely combines the mellow umami of Hida beef with the deep flavor of sea urchin. High-grade Hida beef is also used in many other fantastic dishes, such as the crispy yet juicy fried [Hida Beef Round Steak Cutlet] and the slow-cooked [Hida Beef Stew]. Another appealing point of this restaurant is its seasonal seafood menu. This place has a sister branch that is a historic sushi restaurant, and this allows them to serve sushi and sashimi directly stocked from Toyama, Kanazawa, and Nagoya. Plus, there is a large variety of local sake from Hida and wines that go very well with their excellent dishes, representing the best tastes of sea and land. It's a lovely, quiet place, and the food is delicious.

Buy local, eat local is our motto, so we top our pizzas with Takayama cheese and basil, among other fresh local produce. It goes without saying that we use Hida beef, but we also recommend our locally-produced Okuminokojidori chicken. Enjoy a superb texture and a rich, savory flavor. We aim to be the best restaurant in town - that's why we called ourselves "Dining Bar YZ". With that in mind, we keep our atmosphere casual, and our service carefully attentive. We strive every day to make this a place that locals love. We have customers of all types, from solo diners to ladies' parties, and we have both counter and table seating to accommodate them. Our maximum seating is 20, and we do accept reservations, which we recommend for events.

Our top recommendation is the "Hida Beef Hitsumabushi (grilled beef served over rice) in a Heated Stone Dish" The Hida beef and rice comes served in a heated stone dish, still sizzling! It will really whet your appetite! Thanks to the stone dish, even the last part of the hitsumabushi, ochazuke (rice with broth or green tea poured over it), will be hot. We also offer a variety of other dishes and local Hida cuisine featuring brand-name Hida beef, unique to Takayama! Only three minutes walk from JR Takayama station, it's also conveniently near to the business hotels around the station. One more appealing quality of this restaurant is its cozy and calming atmosphere. The modern ambiance is thanks to the efforts of world-famous plasterer Shuhei Hasado, who worked on the inner walls.
