We sandwiched nodoguro (rockfish) from Yushima using kelp from Rishiri. Small variations in the moisture content of the rockfish give rise to wildly different flavors. Not too fast, not too late. By choosing the exact timing to remove the kelp, it's finished with the aroma of the sea to create a masterful dish. Large clams are sent directly from Hamamatsu. Care is taken to boil it in just the right way using freshly boiled water. It is marinated in our uniquely developed seasoned stock, with no effort spared. We spare no effort in creating our bolognese, made using 100% Hida beef. The linguine, generously infused with decadent flavor, is very popular. As a finishing touch, the dish is liberally sprinkled with Grana Padano cheese. We order fresh pasta from a noodle factory in Kansai. Our pasta is very popular because of its springy texture and the fact that sauce easily sticks to it. We carefully select ingredients, focusing particularly on local vegetables, in order to reflect the season. Color is a big consideration when purchasing ingredients. It gives us great pleasure to bring smiles to the faces of our guests. We like to greet them with thoughtful dishes, made with Hida ingredients. The flavor and scent of soba has been carefully preserved by stone-grinding the buckwheat kernels still in their husks. This fully satisfying dish brings out the texture and rich, savory flavor of soba. Please enjoy it with your preferred seasonings: rock salt or your favorite broth. The richly scented buckwheat flour uses Hida Shokawa buckwheat grains. Katsuo dashi (bonito stock) is added to local Ohnoya soy sauce and mirin fermented with kaeshi, creating a strong broth that isn't overpowered by the soba aroma. Great care has been taken to create an atmosphere where customers can relax and take their time, and the shop interior overflows with the feeling of olden times. [Yagura] uses only A4 and A5 ranks of [Hida Beef] raised in the Hida region. Hida Beef is cooked to bring out its original savory taste, as a [steak], [shabu-shabu (sliced meat parboiled with vegetables)], and [sukiyaki (hot pot with sliced meat and vegetables)]. Enjoy its beautifully-marbled meat with sweet fat, and tender and fine texture. We also serve seasonal local ingredients from Takayama and the Hokuriku region along with the season, including edible wild plants in spring, sweetfish in summer, mushrooms in autumn, and puffer fish in winter. Since its founding in 1930, Sumibiyaki Unagi Uotora has served up excellent unagi (eel) dishes dressed with the same secret sauce made from a recipe passed down through the decades. The sauce is distinguished by its sweetness and its rich thickness characteristic of the Chubu region. Unagi grilled over binchotan (a high grade oak charcoal) comes out crisp yet juicy. Cooking catches only from Mikawa or Kyushu, this is a great chance to enjoy carefully selected, fine quality unagi with fat content and skin texture that changes depending on the season. Enjoy the sweet fragrance of our grilled Hida beef hoba-miso meal in the atmosphere of a historic building

We place fresh Hida beef and Hoba-miso (a seasoning soy bean paste) mixed with scallions and other garnishes atop a magnolia leaf, and serve them on a small gas burner to heat the dish right at the table. We hope our guests will savor this juicy meat, fresh from the oven. We mainly use Hida beef, a special product from the Hida region, receiving fresh deliveries every day from a butcher we work closely with. Our Jasmine rice is high quality rice from Thailand, and our miso is specially picked Kusakabe miso. We expect many of our guests are in the Hida Takayama area to have fun and see the sights, so we greet everyone with a smile. We offer our guests from overseas origami throwing stars and paper cranes. The restaurant has a soothing atmosphere, with slow jazz music wafting through the air. We are housed in a historic building designated as a national cultural asset, so we invite our guests to soak up the history while indulging in the flavors of Hida.
