You have your pick of one of four, multi-course meals created by our veteran chef/owner with 40 years of experience. We recommend our “Mediterranean Marinade”, which shows up in courses occasionally. All of our flavored oils and vinegars are made in house, and our vinegar in particular is impossible to replicate thanks to its full-flavored blend of four different flavored vinegars. We take great care in picking our rice by tasting Kyushu's rice harvest on a yearly basis and choosing the best one. We only have seven counter seats and 17 table seats in our restaurant, so we maintain an open atmosphere. We add accents such as tororo kombu (kelp) to our yakisoba (grilled noodles), and we are careful to use only tenkasu (deep-fried batter) from companies that make squid tempura. Ikkosha Ramen, made from soup from parboiled pork bones, is one of our most complex and demanding dishes.
For the soup, we remove a large amount of blood from the skull, spine, and leg bones of pork from Kyushu. The bones are then parboiled in order to take away their natural odor. After that, we continuously replace the bones and soup as they work on bringing out its flavor. Water levels are adjusted depending on the temperature and humidity levels of the day. The noodles are treated with great importance as completed noodles are given a thorough inspection on site. We try to find the flavor desired by that region by constantly researching different people's sense of taste and tasting a lot of noodles ourselves. Now, our goal is to establish Hakata's noodle culture on the world stage, and we continue to strive towards that every day.
