A swanky restaurant with fresh fish, delicious blue prawns and beautiful Mangalitsa pork.

Given my background in Japanese cuisine, I insist on using only fresh fish. Located along the Seto Inland Sea, Matsuyama is a great place for great fish. And the blue prawns I use, which are raised on the peaceful New Caledonian coast, are especially sweet and delicious. The colorful and beautiful Mangalitsa is richly-marbled, understandably earning it the title of Hungarian national treasure. Sometimes called "legendary pork," one typically doesn't get many opportunities to try it, so don't miss your chance! The average age being around 21, my staff members are young and hard-working. We make our youth our strength as we provide upbeat and friendly service. We're young, but we give our all! We hope you take a minute to look around you. Our restaurant has a swanky and unique design, but it's laid-back, so relax and have a good time!

Visit us and enjoy our straw-seared bonito and delectable Kamameshi (kettle rice) while you enjoy local sake in a relaxing atmosphere.

Shio tataki, a regional delicacy, consists of fresh-caught bonito from the Fukaura area of Ainan. The fish is seared to order over a straw flame. You will absolutely love the warm aroma of freshly seared fish. It is also interesting to watch how the bonito's fat content changes from season to season. For our local kamameshi, we use Madai fish from Ehime and Himekko-brand jidori chicken. We also recommend the seasonal kamameshi made with fresh ingredients. Every season, we prepare a selection of over ten types of locally made sake and accompanying seasonal side dishes so you can enjoy the specialties this region has to offer. We welcome all guests from all corners of Japan and beyond to come enjoy our wide variety of courses. Our restaurant is suitable for various activities and occasions, such as parties and entertaining clients.

Relax and enjoy great Italian cuisine, surrounded by the lush nature on the island of Shikoku

Our chef Sano tells us that while he was training in Italy, he had to make pasta by hand over and over. Among all of the pastas he made, he was most proud of his "Japanese Beef Bologna-Style Meat Sauce Fettuccine," which features a tomato-less meat sauce and noodles with a distinctively chewy texture. Sano tells us that when it comes to meat, "we use everything from the head down to the hooves, and no parts are wasted." Whether they need to be grilled, steamed or stewed, he enjoys getting the best flavors out of his cuts with the ideal cooking method and preparation for each one. He is particular about making just about all of the food we serve here by hand. Instead of buying ready-made goods, he stocks up on ingredients to cook with. He even uses herbs and seasoning grown in his own vegetable garden. Pizzeria Austro sits at the edge of a pond. Relax and enjoy a drink and a meal in a soothing, tranquil environment, surrounded by lush nature. A hiding place for adults, away from it all.

Our anago (conger eel) is from Akashi, Hyogo, and we grill it over charcoal. The wonderful charcoal aroma comes to life in this dish. Our amazing recipe was inherited from "Kissou," a famous restaurant in Shikoku-chuo. We proactively seek out local ingredients from the Seto Inland Sea, home to a diverse collection of seafood, to provide you with our characteristic flavors of the season. Visit us nd you'll enjoy a variety of ingredients that change throughout the year. As we serve our customers, we regard each moment a "once-in-a-lifetime" event. Shabu-shabu with our very own mackerel in a welcoming atmosphere

Sashimi made from fish allowed to swim in a large tank to prevent the accumulation of stress. Once in the shabu-shabu, the flavour of our plump mackerel is condensed, leading to a deep, rich flavour. For one of the fish swimming in our tank, we wait until an order comes through before preparing it, ensuring that it is as fresh as can be. We invite you to taste for yourself the deliciousness resulting from this level of freshness. In Matsuyama, there are many tourists and people on business trips, so we endeavour to create a restaurant where all customers feel equally comfortable. We work hard to ensure that there is an atmosphere here that even people coming for the first time can enjoy. The moment our chef first tasted the fish here, he was surprised: it was too delicious for words and, anyone would be moved by its wonderful freshness!

Senzanki is an Imaharu specialty. The chicken kara-age (fried chicken) is made from chicken marinated in a blend of 2 varieties of soy sauce and has a crisp texture. The fragrant aroma of the soy sauce will whet your appetite. The main ingredient of okonomiyaki (savory pancake) is cabbage. We use cabbage from Kumamoto in Kyushu. This cabbage tastes sweet when raw and becomes even sweeter when steamed. We also have a secret method of cutting it which gives it a soft texture. We want customers to eat delicious food and also experience great service. As young customers come to the restaurant, we welcome them with service that is not only bright, cheerful, and energetic, but attentive. There is no need to go all the way to Hiroshima when you can enjoy authentic Hiroshima tastes right here in Imaharu. We are also particular about the udon (wheat flour) noodles. They are an original creation of the Imaharu restaurant and are made with a consistency that goes perfectly with the other ingredients.

Hit the hot springs, then come by for some amazing local sea bream and a sake pairing from an abundant selection.

Amongst all the sea bream caught in Japan, those from the Seto Inland Sea are truly special. So much so that the most famous Japanese restaurants won't use any other. Our chef uses his keen eye to select only the freshest produce from Ehime prefecture's rich land and sea, as well as feature rice from local farmers. We use only the highest grade produce, caught that very morning from the local Mitsuhama port. We bring you the food when it's at its most delicious. For that reason we offer you a timed menu, created with all our heart to leave our customers feeling satisfied. If you wish to spend a little more time, please take advantage of our abundant sake cellar. If you're unsure which to go for, and want to taste a variety of sake or local beers, we offer our "tasting sets" to enjoy.

Our seafood is made from only the finest-selected ingredients to cater for all your dining requirements. Our quality and value is guaranteed!

Most of the seafood is seasonal items from Setouchi. We also have direct deliveries of tuna from Tsukiji and ikura/sujiko (salmon roe) from Hokkaido. I am constantly searching for good ingredients. When I have new information, I cannot help but go and check it out with my own eyes and taste buds. Sea urchins are from the local Nakajima area. These live sea urchins are prepared to order. Eels are from Nagasaki (also kept alive). We use mackerel locally produced in Imabari. We recommend eel lightly seasoned with rock salt and pickled mackerel made with sushi grade fish. We believe that the greatest hospitality is created by striking a balance between quality and value, and creating an atmosphere that customers would want to return to. We are always aiming for better quality. Parties of up to approximately 15 guests can be accommodated in the tatami room. We have eight seats at the counter. Whether for business meetings or gatherings of friends, we can offer party course meals according to your budget.

Delicious, handmade buckwheat soba noodles with a view of a beautiful Japanese garden

Please enjoy our soba, proudly produced with care from the areas of production and the farms. We are artisans, not businessmen. We prioritize making delicious soba that we are proud of, rather than making a profit. We use buckwheat from Yatsugatake, Shinshu, where high-quality buckwheat is produced due to the great variation in temperature between day and night. Grown with organic fertilizers, our soba is slowly ground in the stone mill, matured and handmade using the ratio of 80 percent buckwheat and 20 percent flour. We carefully select the area of production, the farmer, and even the specific farm. We strive to satisfy our customers, and that includes our atmosphere and service. We consider customer satisfaction, not money, as the greatest profit. We are proud of our Japanese garden. Landscapers from all over Japan come to visit it. We made a large window so that guests can enjoy the view while having their meals.
