Our chef spent a year working on improving upon the chicken liver pate of a famous three star French restaurant, and this dish is the result of his efforts. Making use of the liver of the Shamorock breed of chicken, a famous Aomori product, it is painstakingly prepared without the use of any additives. Its vibrant color bears testimony to its freshness. Without a good fond de veau or fond de bouillon, it is impossible to cook delicious French food, however good the other ingredients. At this ramen shop, you can enjoy a new noodle dish made with Aomori ingredients and seasonings.

This chic ramen restaurant with a stylish white exterior is located near Hirosaki Castle (Hirosaki-jo). The black, red, and white interior that's reminiscent of Hirosaki Castle is the work of a designer from Hirosaki. Even the logo was written by a calligrapher from Hirosaki, illustrating the love to local products. All the ingredients, right down to the seasonings, are from Aomori. Using the original techniques, an incredible amount of effort has gone into developing the soup that'll bring out the natural flavors of the ingredients. They have the beer, wine, and even a la carte dishes, making it a great place to enjoy drinks with noodles in the evening. The [Ita Soba] is a dish that takes a different idea from ramen, with local vegetables and pork cooked in red wine carefully added like they were part of a full course meal. It melds Aomori ingredients, Italian cooking, and ramen together.
