Our Tomakomai surf clam is lightly heated in boiled-down sake. The true flavors of fish cannot be brought out through broiling, which is in style now, or using kelp to draw out the flavor. What we worked hardest on is how we grip the sushi rice. Come in during autumn for the widest selection of toppings that Hokkaido has to offer. This time of year, the shellfish are from Hokkaido. We are sticklers for using thornyhead fish from Hokkaido, whether boiled or grilled. We hope that even if you order the same thing the next time you come to our restaurant, it will taste even better. Our steamed conger eel with herbs combines perfectly with the aroma and sourness of the fresh tomatoes and the flavor of the Japanese pepper. The restaurant uses female A4-rank beef with good marbling. We select the quality of the marbling, and bring in the meat 20 days before its aging process. We make sure the food comes out in its best condition, at the right time. The kitchen communicates with the servers in order to serve the food at the right temperature, flavor, and scent. Truly a rare gem of a dish that requires time and effort, the Yamagata beef has to be sprinkled with salt, cooked for eight hours and broken up into small pieces while still hot. Yamagata beef boasts a taste that is savory and has a fresh fragrance. We always cook it in ways that will draw out such a sublime taste. "The kind of beef that I think of as authentic Yamagata beef should be accepted anywhere. So, I decided to open my restaurant at Ginza," says Mr. Kato. As a matter of principle, meals ordered up to 9pm will be handled as one omakase ("leave it to us") course set. Seasonal ingredients and delicious crabs at this cozy, intimate restaurant

In traditional kaiseki (course meal) dining, "Owan" bowl dishes are particularly important. Our bowl dishes include snow crab fritters, "Shogoin" daikon radish, mushrooms, red kidney bean greens and thick wakame (seaweed) topped with grated turnip. It is an elegant soup, with exquisite, vivid flavors. We only select crabs with the finest texture. A firm texture blends perfectly with the miso (fermented soybean paste) and the sweetness of the flesh. Recently we have used crabs from Kami, in Hyogo Prefecture, but we're actually more interested in sourcing the finest products available in season than in simply focusing on famous production areas. Proximity with out customers is also a distinctive trait of Kansai cuisine. Without being invasive, we like to hold moderate conversations with our customers, adapting to their desires and personal preferences, and striking a delicate balance that really takes years of experience to master. Enjoy a small dishes and sushi course using carefully-selected ingredients in our chic and quality sushi restaurant for adults.

Sophisticated and high grade restaurants stand side by side in Azabujyuban. [Azabujuban Matsue sushi] locates at one corner and serves a course menu with sushi and small dishes. The interior is a chic atmosphere with black keynotes, which creates a good harmony of Japanese and western quality. Ingredients are carefully selected mainly from Tsukiji Market, and vegetables are purchased from contracted farmers. Sushi is served with the most common Edomae style, and use 2 types of rice according to the fish. Small dishes from customary to original ones present the seasonal tastes. Our restaurant is open from 6:00 pm to 4:00 am (the next day). A good selection of sake and wine is suitable for late hour adult dating as well as business entertainment and a casual meal.

We put extra care into the bowls that are the stars of Japanese cuisine. We try to make our dishes convey the feelings of the season. We often use pike conger as the owner chef apprenticed in a Kansai-style restaurant. One of the ingredients that requires the most care is the broth, which determines the flavor of the dish. We use only high-quality katsuo (bonito) flakes supplied daily, and first-class kombu (kelp) from Rishiri. We do not have a menu since we purchase the best, seasonal ingredients that is available every day. We hope to see you come and experience Japan's four seasons through our dishes. Our private rooms are simple Japanese style so that you can enjoy a quiet, relaxing meal for celebrations, meetings, and other important occasions. We offer a private space so you can enjoy a leisurely meal with those closest to you.

Our 20 kushiage range from traditional options to Rokkakutei originals, giving you a diverse selection. Our kushiage topped with tonburi-commonly called "land caviar"-is one of our most highly rated dishes. It's so popular our customers add it on even when they've ordered other dishes. Grease sits heavy in the stomach, so we're careful to keep it to a minimum. We use a unique blend of animal fat and vegetable oil, flash-fry our food, and then cut the excess oil. Everyone eats at a different pace. We match our service to your tempo, so you can enjoy your food at its optimal temperature. For kushiage, heat is everything. If they cool down, they lose their flavor, so we are careful to make sure that doesn't happen. Azabu-Juban, an oasis in a big city. The neighborhood is warm and welcoming, so we host a lot of local patrons. Our restaurant is the kind of place you could stop in while out for a stroll. It's a space where you can really relax.
