Authentic kaiseki cuisine using meticulously sourced, all-natural ingredients

We take pride in all of our seafood. We source our seafood from Suruga Bay and Sagami Bay through wholesalers we can trust. It is all wild caught, and we are thoroughly mindful of season and quality, making our product great whether served as sashimi, grilled, or steamed. Our restaurant in is Okinawa, however we built it on the concept of enjoying the authentic flavors of kaiseki cuisine. For that reason, nearly all of our ingredients come from outside the prefecture. This is time consuming and expensive, but we work tirelessly to get everything just right. In order to offer the most authentic kaiseki experience, we purposely avoid using the local Okinawan dialect in our service, and all of our staff strive to provide our guests with a feeling of luxury. The restaurant is an excellent setting for receptions and business negotiations, but it also offers a chance to enjoy several small dishes with a cup of sake, making it a warm welcome for solitary diners as well. Their limited Ryukyu Marche course features the signature meat dish, "Japanese Beef Flambe with Foie Gras Garnish and Warm Vegetables." They grill the choice Japanese beef in front of their diners, bringing it to perfection with truffle sauce for a luxurious treat. We work hard to arrange the timing of your meal, so that the next dish doesn't arrive too early or too late. Our specialty is Ishigaki beef, from cattle raised in a warm, stress-free environment; this beef has the perfect balance of fat and muscle, and is served very fresh. The taste is not too oily, with just a hint of sweetness. We select our vegetables carefully to accent the flavors of the meat -- the famous Okinawan vegetable goya is juicy, with a slight bitterness, and a crispy texture after cooking. The crunchy texture of our vinegared mozuku seaweed is also very popular.

We use fresh seafood procured daily. Varieties of emperor fish like star snapper and green snapper are especially recommended. The homemade, dehydrated batter absorbs the flavor of garlic grilled on the iron plate to make it richer in both fragrance and flavor. We scour the market every day, checking the freshness of every piece of newly arrived seafood and make sure to see every fish with our own eyes before buying it. We have also preserved recipes passed down in the family for generations to make sauces and dressings to complement each dish. No time or effort is spared in making every single dish, no matter how busy the restaurant gets. Everything is handmade with great care, so some dishes may take time. We try out new things every day in an effort to serve our guests as quickly as possible and try hard to create a home-like atmosphere so our guests feel at ease.
