Our original flavor has been refined over many years. Our sweet soy sauce from Matsumoto in the Shinshu region is combined with pork bone to give the soup a profound complexity. Give the original flavor a try. Our unique broths feature ingredients you won't find anywhere else, like white miso and sweet soy sauce. Our miso ramen is an excellent example. This is a popular set meal comprising of maki shrimp, whiting, shiso maki squid, three types of vegetable (pumpkin, eggplant, Moroccan beans), and mixed fried shrimp. Other than this, we also have two other set meals, called "Usui Touge" and "Karuizawa." We use ingredients that are in season, changing them depending on the time of year. That is something that we are very particular about with our tempura. The fish are delivered directly from Tsukiji fish market and are incredibly fresh. When we cook, we always make sure to concentrate on what we are doing. Adjusting the temperature of the oil is one of the difficulties of fried food. The adjustment of the heat that is necessary for this delicate style of cooking depends upon the craftsman's concentration. That is the kind of cooking that we produce every day. [Grill & Dining G] is the main restaurant at [Karuizawa Marriott Hotel], a resort hotel in Naka Karuizawa. Since the opening in summer 2016, we have been popular among the hotel guests and drivers as well as the locals, and are already becoming a popular spot in Naka Karuizawa. The signature menu is grills, as the name of the restaurant says, with fresh ingredients from Shinshu area. Especially [Shinshu Grill Combo] serving 3 types of meat is one of our recommendation. The glass wall curved in the shape of an R, and the wooden and green interior create a space as if we are cuddled warmly by nature. In the high-class but cozy atmosphere, guests can relax at any time from the morning to the evening for various occasion.

[Hikariya Nish] was opened at a renovated solid warehouse built more than 120 years ago, in the era of Meiji that has spent time silently. You can fully enjoy our natural French cuisine with the concept of macrobiotics, created by the chef who accumulated trainings under top French chefs inside and outside of Japan, and worked actively also as a grand chef of a resort hotel when still young. We serve various kinds of courses such as [Etoile], a lunch menu with which you can select a main dish according to your feeling that day, and [Syemphonie], a dinner course with which you can fully enjoy our proud dishes. Our playful dishes will make you smile. For example, you can [harvest vegetables on roasted onions and olives which resemble [the soil]. [Yokikan] is a tower built in the middle of the Meiji period. Over 100 years have passed since it was built, and now it has been restored as [Patio Daimon]. Our [Japanese Cuisine Shunka] located in it offers only kaiseki (traditional Japanese cuisine) courses with Shinshu's traditional vegetables and Nagano prefecture's proud brand meats. Chef Nakamura's policy is [to offer an abundance of savory dishes]. He has renewed the traditional kaiseki style with a wide variety of small-portioned dishes, into less number of more voluminous dishes, so that the guests can enjoy the seasonal ingredients to their heart's content. Have the ultimate happy moment with the luxurious seasonal cuisine, while enjoying the green trees from private Japanese tatami rooms with tables and chairs. Hikariya Higashi in Ote, Matsumoto City, is a restaurant recommended for celebrations such as betrothal ceremonies and other special occasions. In the historical building built in 1887, you can enjoy seasonal cuisine while experiencing the beauty of Japanese culture, including the fusuma (sliding door) paintings related to Matsumoto. Each kaiseki course incorporates ingredients from the local Shinshu region, with local vegetables recommended confidently by the chef and succulent "Shinshu Wagyu" beef. The restaurant also offers children's dishes for family anniversaries and memorial occasions. Local brands of sake and whiskey are provided, and the private rooms can be used for business entertainment, dinners, and various banquets.

Cocktail Works Karuizawa offers a wide variety of drinks and Nagano's finest ingredients, such as Shinshu apples, grapes, and Shinshu Beef. Its popular "Shinshu Beef Lamp Steak" is a dish where you can feel the rich taste and sweetness of the meat. The delicious taste is also brought out in various Italian dishes such as "Bolognese." An extensive menu is available for drinks to go with the food, including seasonal cocktails made with plenty of seasonal fruits and non-alcoholic beverages that are popular among women. There is a liquor shop next to the restaurant where you can purchase Nagano local liquors, whiskies from various countries, and craft spirits. The antique-style shop is open from 2:00 pm (Saturday, Sunday, National Holidays only).
