Enjoy our ultimate tempura using special Taihaku Sesame Oil, cooked by a skillful chef to bring out the original tastes of the ingredients to their maximum.

At our restaurant, very close to the Kusuri Bridge in Kushiro, Hokkaido, you can fully enjoy crispy and light tempura using fresh ingredients that can be found only in Kushiro. Our owner chef's policy is to take the time to prepare everything, so he prepares everything every day from selecting ingredients to making dipping sauce for the tempura. You will be able to feel truly happy with our tempura, by watching with your eyes the ingredients being put in a dough and deep fried in an oil pot, listening with your ears the sound of tempura being deep fried, and eating with your mouth hot and crispy tempura quickly dipped into a dipping sauce with the good aroma of bonito. At our restaurant, you will easily feel the philosophy of our owner chef that tempura should be tasted with eyes, ears, and mouth.

We strive to improve our sushi-making every day without adhering to trends to capture the true flavors of fish.

Our Tomakomai surf clam is lightly heated in boiled-down sake. The true flavors of fish cannot be brought out through broiling, which is in style now, or using kelp to draw out the flavor. What we worked hardest on is how we grip the sushi rice. Come in during autumn for the widest selection of toppings that Hokkaido has to offer. This time of year, the shellfish are from Hokkaido. We are sticklers for using thornyhead fish from Hokkaido, whether boiled or grilled. We hope that even if you order the same thing the next time you come to our restaurant, it will taste even better. It is with that wish in mind that we think daily about how to bring out the best flavors of our seafood. We hope you will look forward to that when you come to our restaurant. We offer five snacks designed to go well with sake so you can enjoy a leisurely drink with your meal. For example, we have a lot of richly-flavored snacks such as shrimp with urchin and soy sauce or whelk with liver. Spend a night in our mature ambiance.

Enjoy "toro nigiri (fatty tuna) sushi" made with delicious tuna from Oma.

We work to obtain seasonal ingredients from all across Japan, not just Hokkaido. The Oma tuna, which has its peak season from September to December, has an incredibly melty flavor that makes it a consistent favorite. We live in an era in which distribution channels are amazingly well-developed, so it is possible to procure fish from all across Japan. We make sure that we know the seasons for each area of the country, and can then offer the best ingredients for each particular season of the year. Moreover, we constantly search for the best way to make our ingredients taste great. For example, when cooking an egg, if you add shiba shrimp paste, it really makes a difference. We always work hard to bring out the flavor with techniques such as this. Starting with the counter seats that allow customers to see sushi experts at work, we are very particular about the atmosphere of our restaurant. We really want you to enjoy everything, including watching our chefs at work.

Homemade karasumi (dried mullet roe) and edible wild plants

We're particular about the delicious ingredients that we use. We get our mullet caviar from Nagasaki and use our special salt. It takes us three to four days to create our homemade karasumi. Lightly, aromatically roasted, it is perfect with a cup of sake. We prepare delicious dishes featuring the fish of Hokkaido. We also feature edible wild plants in springtime, autumn mushrooms and more delicious ingredients, including homegrown local tomatoes and shiitake mushrooms from Otaki-mura. "The smiles on our guests' faces are our delight" is our motto, and we take it to heart. Anago is a specialty nigiri in which every detail, from the ingredients and flavoring, to the technique and how it is served to customers, is carefully considered. The light searing seems to be what gives the anago the melt-in-your-mouth texture. Uni is saltwater sea urchin from Hokkaido, known for its freshness. We also have rare toppings such as sake (salmon), Hokkaido natural king salmon (masunosuke) and our specialty anago. We are dedicated to our style of serving directly from the counter so that guests can enjoy freshly-made nigiri. For raised tatami tables, we serve 3 to 4 fresh nigiri at a time, matching the pace of the guests. The ingredient showcase that sits on the wide counter space is lined with fresh seafood. Many varieties of excellent sake are available in the beautifully lit sake shelf. Try sitting on the raised tatami at a kotatsu (table with a heater in a floor well). The perfect spot for a party too.

This dish is made by simmering righteye flounder unique to Hokkaido with "domyoji-ko" (rice flour) usually used to make sakura (cherry blossom) mochi. The lily roots impart a slight pink color reminiscent of flower petals. The dish is finished with a broth blended from eight different types of bonito flakes that are sliced differently from the norm, and is our signature dish. Naturally, we use ingredients from Hokkaido, but we also choose the best of seasonal seafood from all over Japan. We sometimes stock rare and valuable fish not found in the market. Our restaurant does not have a fixed menu. We accept requests from our customers when they make reservations.
