Okonomiyaki Pancakes made from Fresh Ingredients

[Ika kyodai] (squid brothers) contains raw squid and squid tempura (fried). You do not have to be a connoisseur to fall for this delicious dish, in which the smell and taste of raw squid and the texture and flavor of the fried squid can be savored. Take cabbage or scallions for example, which change in quality depending on the season. Here, we source them based on the best areas depending on the time of year. The pork, eggs, noodles and sauces were sought out to best fit our okonomiyaki (Japanese savory pancake). We strive for excellent in-store service, so we take your order while you stand in line and begin preparing it before you are seated. Our goal is to feed you quickly while still preparing each dish with the utmost care. The gold badge is only awarded to members of the grilling staff who passed the grilling test. It is a symbolic badge of Reichan. With in-company testing, we strive to keep the skills and motivation of our staff up, to always serve delicious okonomiyaki.

Okonomiyaki (savory pancake) made right in front of you!

The secret of okonomiyaki is to cook it slowly. Once you flip it, it is thouroughly and slowly steam-cooked without touching or pressing. The water in the cabbage brings out the taste. Because the entire cooking process happens in front of our guests, it is important to make it enjoyable as a performance. We exclusively select eggs with two yolks. We also believe that cooking soft-cooked eggs is important. We loyally follow my professor's teachings, who said, "If you make delicious food, guests will naturally follow", and we do what we have to do for this everyday. The iron griddle is polished untill it shines after closing. We make sure that viewing the cooking process is as enjoyable as the taste of your food.

Offering a healthy, yet delicious take on Okonomiyaki

Our focus is on Japanese ingredients that are healthy and satisfying. We use fresh-cut soba (buckwheat noodles) in our okonomiyaki (veggie pancake) and also offer whole-wheat soba, which is rich in vitamins and minerals. And with our okonomiyaki, we use flavorful and aromatic items like shiso (perilla leaf) and pickled plum. Then by steaming the dough and cabbage while it grills, the result is a fluffy pancake. We also include white scallions to add a bit of texture to it. Also too, since oysters are caught year-round in Hiroshima, our menu takes advantage of this local specialty. As for hospitality, we put communication with customers first and aim to bring a smile to their face. Many of our guests are travelers, and we’re always available to suggest some great spots and recommended shops in the area. Our dishes include grouper-wrapped chives in bitter orange sauce ("namachiri"), deep-fried scales, sashimi, and shabu-shabu, as well as head and chin both salt-grilled and as a hot pot. We'd very much like you to enjoy this course, which wholly uses our all-natural grouper. Chef Umeda procures only the finest wild fish from trusted sources around the nation. Our shop has neither a menu nor posted prices. As a customer may be with family or planning a business dinner, and as there are variations in budgets, desired items and preferences, we tender the desired experience after setting of the reservation and discussion with our customers. Fresh, hand-caught seafood in a peaceful space

The inspiration came when the local food-processing factory "Seto-tekkou" brought us their trial product, shiitake mushroom chips. I tried it with foie gras. Originally it was with foie gras terrine, but we now use powdered foie gras instead. We grow our vegetables and herbs right next to our restaurant. In addition, we have used oysters caught by Kawasaki Ken from Hatsukaichi Jigozen ever since I was impressed by their taste 20 years ago. Sea bass caught by the famous fisherman Mura Kouichi is also one of the ingredients we are proud of. I believe there are many way to approach service, but my personal philosophy is not to disturb our guests. Realizing that our guests are paramount, we try to give them peace and space for them to enjoy their special time. Our concept is to let our guests feel "the passing of the four seasons". Our regulars have been coming back for our seasonal specialities for over a decade. People also come to our restaurant to enjoy our aged wine selection.

The original idea came from my wish to make something delicious using oysters, a local specialty. I had noticed that Yuzu (citrus fruit) comes in season around the same time and so I tossed the oysters with original Yuzu-miso. My guests expressed their approval. We are proud to use the freshest local ingredients: firm-fleshed "bream" from the Setonai sea, "Hiroshima-gyu" beef, beautifully marbled, served in miso-roast, and "Pike Conger" from my hometown Yamaguchi which has a delicate taste. Because we want serve you in the best possible way we limit our guests to 3 groups a day. Our staff keeps an eye on how fast you eat and drink to time serving your dishes perfectly. We have many regulars, who were taken by our calm and relaxed atmosphere. Our private rooms in the back are perfect for business dinners, anniversaries, and other occasions to treat your important people.

Matochan is located on Miyajima Island, where the World Heritage Site Itsukushima Shrine stands. It offers Hiroshima's famous okonomiyaki and oyster dishes of Miyajima's specialty oyster, Gokusenou. Its okonomiyaki is made with prefectural pork and eggs, and high-quality first-grade flour is used. You may order the classic "Niku-Tama Soba (pork, egg, and noodles)" for okonomiyaki and try eating it with a metal spatula. For snacks, choose "Kaki Pon," which is Gokusenou oysters with ponzu (Japanese citrus sauce), and enjoy it with three kinds of local Miyajima Beer.
