Every reputable restaurant, in this case a 2-Michelin starred entity, possesses a crew to uphold its prestigious name. Owner and culinary master Shinobu Namae perfected his practice by training as a sous chef in well-known restaurants in France and England, and established L’Effervescence in hopes of amalgamating the best of French cuisine and the Japanese seasonal palate. Together with his trusted crew, each member plays a significant role in regaling every diner’s enjoyment. Along with Director Sosuke Aoshima, they ensuressmooth day-to-day operation throughout the two-storied building. Guests will be delighted by maître d'hôtel Zacchari Touchane and Yasuko Takada with their warm reception. Head Sommelier Akio Matsumoto oversees the pairing of a specific spirit to each course from an impressive collection by Wine Director Motohiro Okoshi who brings in 12 years of expertise to the table. Head Chef Hayato Hirose, who has plenty of experience, reins the kitchen and secures the freshest ingredients from artisans all over Japan. Chihiro Naito, a sous chef who creates relishing seasonings via experimentation with fermentation and wild herbs. A complete course has to end with a delectable dessert which is whipped up by restaurant's own pastry chef, Rie Otani.
